Sake wine-based short-drink recipes

Sake is a famous Japanese fortified rice wine with historic roots stretching as far back as the 3rd century, where on special occasions like Shinto religious festivals, wedding celebrations and New Year festivals, chestnuts, rice and millet would be chewed by villagers and then spat out together into a container to ferment into "Kuchikami" or Sake. Thankfully today's process, whereby pure alcohol and glucose is added to small quantities of rice mash, is a bit more sanitable.
