Eau de vie brandy

Eau de Vie (French, meaning "water of life") is generally established to be a clear fruit brandy, rarely touching wood, and usually drunk fairly young--it's point being to preserve as much original flavor from the fruit as possible.

The most commmon fruits used for eau de vie are cherries (bottled as kirsch or kirschwasser), pears (Bartlett, also known as Williams), plums (the basis for Yugoslavian slivovitz), and raspberries (framboises).
