2 oz Peruvian Pisco brandy
1 tsp lemon juice
4 - 6 oz ginger ale

Pour the Peruvian Pisco into a highball glass filled with ice cubes. Add a spoonful of lemon juice, then fill with ginger ale. Serve.

This is my second favorite, right after Pisco Sour.

Missing stuff

It works, but there are things missing for a traditional chilcano (my season favourite). Add a dash of sugar syrup and two to three drops of angostura bitters. Some people replace the Ginger Ale with Sprite, but to me it isn't a Chilcano, too sweet!
