Pour 3/4 of a full shot of absinthe in a sundae glass. put a brown sugar cube on a spoon with holes in it and rest it on the rim of the sundae glass. Pour the remaining 1/4 of the shot of absinthe onto the brown sugar cube, light the brown sugar on fire (put the flame under the spoon). Let the flame burn for a minute while the brown sugar drips into the glass and caramelizes. stir the caramelized sugar into the glass. Add the water to the glass, stir again. and serve.

I prefer to follow this ritual to the letter, except I do like it mixed half-and-half with water. About 3/4 of an ounce of Bohemian style absinthe with an equal amount of water. It takes a fair amount of stirring to get the sugar to disolve, but it's oh-so-worth it!
I still think the Suisse do it best, though. Just a personal preference.

I prefer to do something similar. put the sugar cube on the absinthe spoon and pour the absinthe in the sundae glass. Ignite the sugar cube and drop into the glass. Then pour a little water(lame, i know but it brings out the bouquet of the herbs) then enjoy.
