1 oz light rum
1 cherry
2 oz pineapple juice
1 oz Blue Curacao liqueur
1 oz cream of coconut
1 slice pineapple

Blend light rum, blue curacao, pineapple juice, and cream of coconut with one cup ice in an electric blender at high speed. Pour contents into a highball glass. Decorate with the slice of pineapple and a cherry.

I was introducted to these at a wedding I worked and they sounded delicious.

I modified it and added parrot bay instead of light rum and cream of coconut.

I had this drink on a recent holiday to L.A. and it was great!!! Its a huge pity i can't find a bar in australia that knows how to make them!!!

This is what we did to modify as we had a few on our cruise...Used a real pineapple cut it out and kept the juice and some chunks to the side. Added in the blender some parrot bay coconut rum and light rum and of course anything else you like put in the ice blended on high then poured everything back in the pineapple. Keep enough on the side to keep making drinks and pouring in the pinneapple..its better then a cup...
