Bob Abbotts Sunshine recipe

Bob Abbott - mayor of the sunshine coast was the inspiration behind this wonderful celebratory drink. Drink was concocted the evening of his landslide win by some wonderful females who were elated at the demise of the adversary Joe Natoli.

Good on you Bob!!!!! One for the community in many ways!!!!

Hurricane Glass

200 ml coconut cream
1/2 Freshly crushed pineapple
120 ml Bundaberg® dark rum
dry ginger ale

Crush the pineapple in a blender with ice and add coconut cream and rum and pulse blend for 3 clicks

Serve in tall cocktail glass - poco grande is excellent - presents a taste sensation about to happen

Fill glass 3/4 full and top with ginger ale

Garnish with mint leaves

Can rim glass with sugar if desired
